The Sweeter Side of Chocolatiering

1958 was a very good year for the chocolate lover. It was the year that Rose and Richard Adler opened the first Chocolate Box store in Camberwell, and shared the result of their chocolate-making skill with an appreciative public. The next generation, Marion Adler Bishop and Gary Adler, are carrying on the family tradition.

At the beginning of The Chocolate Box’s history, chocolates were made at the rear of the store and were piped, hand-filled and decorated. Marion can remember working in the store at age thirteen, mixing fondants, pouring them into chocolate bases, and piping completed chocolate with a decorative initial. The chocolates were laid out on trays behind the glass counter to be sold that same day.


The chocolate selection was made up of chocolate coated creams, nut clusters, hard toffees, hand-dipped jellies and fruit. Until the sixties, many Australians had never tried the imported European-style pralines that are popular today.
